Carmen, thanks again for a delicious and thoughtfully prepared meal. The chicken piccata is on par with the best Italian restaurants, I could have eaten it all night. My older cousin Karen had plantains for the first time on my recommendation, and now she is a fan. The flan was perfection. I got some very good feedback from people, including the gentleman who used to dine in a Cuban restaurant in Manhattan. Some also commented that it reminded them of places near Syracuse University in the Westcott St. neighborhood, well known in Syracuse.

I hope too that it was profitable for you and Paula as well. I explained to some how difficult it can be to find a reputable restaurant with outstanding food sanitation, and pride behind the product, with authentic recipes, much less on a Monday night with short notice, before Christmas. Who the hell needs Cracker Barrel.

Are you going to be open on New Years Eve? I’d bet that a buffet, salsa music, and a midnight toast would pack the place on that night. People who go out are always looking for something new and exciting on New Years it seems. If not, maybe next year…
