We love ZeeLemons, and when we found out it was her birthday, we wanted to make something extra special for her.  Vegan, of course, just like her!

ZeeLemons Vegan Birthday Special

What you are seeing is a thinly sliced stack of grilled sweet potato alternating with apple, on top of caramelized onion, grilled Swiss Chard and Brussels sprouts, set off with dabs of whipped sweet potato seasoned with coriander.

We enjoyed sampling his experiments yesterday.  The finished version—  amazing!
